Homemade applesauce & mini apple muffins

Making homemade baby food is simple and nutritious. Over the past year, my little boy has eaten mainly homemade… especially puréed fruit and vegetables. Applesauce is easy to make and can be used in many different recipes. One recipe Tommy loved are these mini apple muffins (a sweet idea for older babies).

Applesauce:

apples, peeled and cored (I used Gala which are naturally sweet)

water

Chop the apples, and place in a saucepan adding around an inch of water. Bring to a boil and then lower the heat. Cover and simmer until tender (around 10 mins). Purée apples as needed. You can add a pinch of ground cinnamon, nutmeg… Serve warm or cold, or freeze (if you freeze the applesauce, add the spices just before serving).

Mini apple muffins:

Makes 12 mini muffins. For babies 1 year+

1/4 cup softened butter

1/4 cup sugar

1 egg

1/4 cup homemade applesauce

1 cup whole wheat flour

2 tsp baking powder

a pinch cinnamon

Preheat the oven to 390 deg F. Cream the butter and sugar in a bowl until light. Beat in the egg until fluffy, and then beat in the applesauce. Stir the dry ingredients together and add them to the bowl, blending just enough to moisten the dry ingredients. Spoon into a greased mini muffin tin and bake for around 10 mins, until golden.
