Banana bread

Here is a banana bread recipe I have wanted to share, more cake-like than bread, a perfect way to use ripe bananas. Add in chocolate chips or chopped nuts of your choice…

Baking feels more enjoyable in the fall, with the weather finally on the cool side. Sipping a chai pumpkin latte while trying a new fall inspired recipe is my new favorite thing to do.

Banana Bread: makes 4 7×3 loaves                                                                                                                                                        

1/4 cup sugar
1 tsp cinnamon
3/4 cup butter
3 cups sugar
3 eggs
6 ripe bananas, mashed
1 (16 ounce) container sour cream
2 tsp vanilla extract
2 tsp cinnamon
1/2 tsp salt
3 tsp baking soda
4 1/2 cups all-purpose flour

1. Preheat oven to 300 degrees. Grease four 7×3 inch loaf pans. In a small bowl, stir together 1/4 cup white sugar and 1 teaspoon cinnamon. Dust pans lightly with cinnamon and sugar mixture.

2. In a large bowl, cream butter and 3 cups sugar. Mix in eggs, mashed bananas, sour cream, vanilla & cinnamon. Mix in salt, baking soda and flour. Stir in 1 cup of chocolate chips or nuts if desired.  Divide into prepared pans.

3. Bake for 1 hour, until a toothpick inserted comes out clean.
